Valentines Lofthouse Cookies (Copycat Recipe)

This cookie dough base also makes the “sprinkle valentine cookies” from my Valentine’s Day cookie box. If you want, you can divide the dough in half to have small batches of those cookies.

Ingredients:

  • Cookie Dough
  • 1 cup + 1/2 tbsp (130g) all-purpose flour

  • 1 tsp baking powder

  • A pinch of salt

  • 5 tbsp (71g) unsalted butter (room temp)

  • 1/2 cup (100g) sugar

  • 1 egg (room temp)

  • 1/2 tsp vanilla extract

  • Decoration, To decorate 12 cookies you’ll need:
  • Approximately a cup of store-bought white or pink frosting *If using white frosting, simply add a touch of red food coloring for a light pink shade* (or use homemade frosting, see below)

  • Valentine’s day sprinkles

Instructions:

  • Cookie Dough
  • Whisk the flour, baking powder, and salt together in a medium bowl; set aside.
  • In a large bowl, beat the butter and sugar until creamy. Add the egg and vanilla extract; beat until combined.
  • Mix the flour mixture into the wet ingredients until fully combined.
  • Roll the dough into 1 tbsp-sized balls (this recipe makes 12 cookies).
  • Place dough balls on a baking sheet, cover, and chill in the refrigerator for 20 minutes, up to 1 day.
  • Preheat the oven to 350°F/177°C.
  • Place chilled dough balls about 2 inches apart on lined baking sheets. Bake for 12 minutes or until edges appear set.
  • Decoration
  • Remove cookies from the oven; allow to cool on baking sheets for 5 minutes.
  • Spoon frosting on top of the cookies and cover with your favorite sprinkles.
  • Enjoy your delicious Lofthouse-style cookies!

Notes

  • Homemade Frosting: Mix 2/3 cup softened unsalted butter, 1+3/4 cups powdered sugar, 1 tsp vanilla extract, 2 tsp milk (adjust for desired consistency), and a bit of red or pink food coloring to your liking.
