Pink Marble Sugar Cookies (ft.sanrio)

This cookie dough base also makes the strawberry heart cookies and Linzer cookies from my Valentine’s Day cookie box. If you want, you can divide the dough into three to have small batches of all those cookies.

Ingredients

  • 150 g unsalted butter (softened)

  • 120 g powdered sugar + extra for sprinkling

  • Pinch of salt

  • 1 1/2 teaspoons vanilla extract

  • 1 egg

  • 300 g all-purpose flour

  • 50 g almond flour (If unavailable, you can use more all-purpose flour)

  • Pink or red food coloring

Instrucciones

  • In a bowl, mix the butter, sugar, and salt.
  • Add and stir in the vanilla, egg, and flours until fully incorporated.
  • Divide the dough in half, removing one portion from the mixing bowl.
  • Add a little bit of pink or red food coloring to the remaining dough in the mixing bowl and mix until fully incorporated.
  • Form each dough into a square: 2 inches tall and 6 inches long, ensuring both are the same size. Place the doughs on a baking sheet, cover with cling wrap, and chill in the refrigerator for at least 1 hour.
  • Using a sharp knife, slice each dough into thirds lengthwise, then turn the dough and cut into thirds again, creating 9 strips per log. Repeat with the other dough, resulting in 18 strips total.
  • Lay one piece of plain dough, one piece of pink dough, and another piece of plain dough next to each other on a flat surface, forming a square log. Top the strips with alternating colors. Repeat to create a second square log.
  • Press the dough strips together tightly, maintaining the square shape. Refrigerate the cookies for at least 30 minutes.
  • Preheat the oven to 170°C/338°F. Line a baking sheet with parchment paper.
  • Remove the dough from the refrigerator and slice into 1/4-inch pieces. Use a heart-shaped cookie cutter to make heart cutouts. Try not to overmix the leftover dough; roll it out to make more cookies (I used this Sanrio cookie cutters).
  • Place the cookie pieces on the prepared baking sheet and bake for 10-12 minutes or until edges appear set.
  • Remove the baking sheet from the oven and let the cookies cool completely. Enjoy the cutest pink cookies!
