Teddy Bear Cupcakes

Easy and cute valentines cupcakes with teddy bear madeleines.

Ingredients:

  • Teddy Madeleines
  • 4 + 1/4 tablespoons (53g) granulated sugar

  • Zest of 1 lemon

  • 1 large egg

  • 1 + 1/2 teaspoons (11g) honey

  • 1/4 cup (60g) melted butter

  • 1/2 cup (58g) cake flour (To make your own, mix 50g of all-purpose flour with 8g of cornstarch)

  • 1 + 1/4 teaspoons (3g) baking powder

  • Non-Stick Cooking Oil Spray

  • Chocolate (For Decoration)

  • Cupcakes
  • 1 box cake mix (flavor of your choice)

  • Ingredients listed on the cake mix box (typically eggs, oil, and water)

  • Decoration
  • White or pink frosting *If using white frosting, simply add a touch of red food color for a light pink shade* (or use homemade frosting, see notes)

  • Valentine’s day sprinkles

  • Toothpicks, ribbon (to make the bows) and glue

Instructions:

  • Teddy Madeleines
  • Prepare the madeleine batter one day ahead. In a large bowl, combine the grated lemon zest with the sugar.
  • Add the egg and honey to the sugar and lemon zest mixture. Whip the mixture until it becomes pale and frothy.
  • Gently fold in the sifted flour and baking powder mixture.
  • Pour in the melted butter and combine until the batter is smooth. Refrigerate the batter for a minimum of 12 hours in a closed container or a pastry bag.
  • The following day, preheat your oven to 390°F (200°C).
  • Grease your madeleine baking pan. *You can find the teddy bear-shaped pan here, it’s not the same as mine but it makes the same shape of teddy bears. Also this recipe makes 8 teddy madeleines.
  • Fill each of the molds in the pan about 3/4 of the way to the top with the refrigerated batter.
  • Place the pan in the oven and bake for 8 to 10 minutes, or until the madeleines turn golden.
  • Remove the madeleines from the oven and allow them to cool slightly before removing them from the molds.
  • For the teddy bear faces use melted chocolate.
  • Cupcakes
  • Preheat your oven according to the instructions on the cake mix box.
  • Line a muffin tin with cupcake liners.
  • Prepare the cake mix according to the instructions on the box, mixing it with eggs, oil, and water in a large bowl until smooth. *I like to replace the oil with melted butter and the water with milk (in the same quantities indicated on the box). In my opinion, the cake is much more delicious this way.*
  • Fill each cupcake liner about two-thirds full with the batter.
  • Place the cupcakes in the preheated oven and bake according to the instructions on the cake mix box.
  • Once baked, remove the cupcakes from the oven and let them cool.
  • Decoration
  • Once your cupcakes have cooled completely, use a piping bag fitted with a decorating tip or simply spread the frosting onto the cupcakes using a knife or spatula.
  • Decorate the frosted cupcakes with valentine’s day sprinkles.
  • Cut the ribbon into small pieces and create bows with the ribbon. Attach a bow to the top of each toothpick by tying it securely around the toothpick or gluing it.
  • Insert a plain toothpick into each cupcake and place the teddy bear madeleines onto the toothpicks inserted into the cupcakes.
  • Once the teddy bears are in place, take the toothpicks with bows and gently insert them into the top of each teddy bear’s head. The bows should sit neatly on top.
  • Serve and enjoy your adorable teddy bear cupcakes!

Notes

  • Homemade Frosting: Mix 2/3 cup softened unsalted butter, 1+3/4 cups powdered sugar, 1 tsp vanilla extract, 2 tsp milk (adjust for desired consistency), and a bit of red or pink food coloring to your liking.
