Kimi ni Todoke inspired Strawberry Shortcake

Recreating Sawako’s strawberry shortcake from Kimi ni Todoke to celebrate the premiere of the third season~~

Ingredients

  • Strawberry Jam (or use store bought)
  • 170g strawberries, fresh or frozen

  • 25g granulated sugar

  • ½ tbsp water

  • Vanilla Cake:
  • ½ cup + 2 tbsp (163g) all-purpose flour

  • 1 tsp baking powder

  • Pinch of salt

  • 3 tbsp (42g) unsalted butter, room temperature

  • ⅓ cup + 1 tbsp (75g) sugar

  • 1 tbsp (15ml) vegetable oil

  • 1 tsp vanilla extract

  • 2 medium eggs

  • ¼ cup + 1 tbsp (75ml) milk

  • Assembly:
  • 1 ½ cups heavy whipping cream (very cold)

  • 6 – 8 tablespoons powdered sugar

  • 21 medium strawberries (washed and dried)

  • 1-2 peaches (optional, see notes)

Instructions

  • Strawberry Jam
  • In a small saucepan, combine strawberries, sugar and water. Heat over medium-high, stirring occasionally, until boiling. Reduce heat to medium-low, simmer stirring occasionally, until thickened (about 10-15 minutes).
  • Remove from heat, cool completely, then refrigerate until ready to use.
  • Vanilla Cake:
  • Preheat the oven to 350°F (176°C). Grease and line a 6-inch cake pan with parchment paper.
  • In a small bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together butter, sugar, oil, and vanilla extract until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  • Gradually add dry ingredients to the batter, alternating with milk, and mix until smooth. Do not overmix.
  • Pour the batter into the prepared cake pan and bake for 18-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Assembly:
  • In a large mixing bowl, beat cold heavy cream and powdered sugar until medium peaks form. Be careful not to overbeat.
  • Slice the cooled cakes into two even layers. Cut 3-4 strawberries into thick slices for the filling and reserve 17 medium sized strawberries for decoration.
  • Place one cake layer on a serving plate or cake stand. Spread a layer of whipped cream over the cake, then arrange sliced strawberries on top. Top with the second cake layer.
  • Frost the top and sides of the cake with whipped cream. Use a piping bag fitted with a closed star tip to create a border of whipped cream around the top edge of the cake.
  • Spread a layer of strawberry jam inside the whipped cream ring.
  • Place the strawberries on top of the strawberry jam, you can even brush some strawberry jam over the strawberries to give them a glossy shine.
  • Serve and enjoy your adorable strawberry shortcake!

Notes

  • After editing, I realized that in the anime, Sawako fills the cake with diced peaches. So, if you want to make it more faithful to the original cake, fill it with peaches instead of strawberries.
