Double Chocolate Valentine Cookies (Two Servings)

Ingredients
2 tablespoons unsalted butter (softened)
4 tablespoons brown sugar
1 egg yolk
1/2 teaspoon vanilla extract
1+1/2 tablespoons cocoa powder
a pinch of baking soda
a pinch of salt
4 tablespoons all-purpose flour
3 tablespoons or more chocolate chips
Valentine’s Day sprinkles and M&Ms
Instructions
- Preheat the oven to 350°F/176°C and line a baking sheet with parchment or wax paper. Set aside.
- Combine the softened butter and brown sugar. Use a silicone spatula or whisk to mix until smooth and homogenous.
- Add the egg yolk and vanilla extract. Mix until combined.
- Add the cocoa powder, flour, salt and baking soda. Mix until just combined.
- Fold in chocolate chips, sprinkles, and M&Ms until evenly distributed.
- Divide the cookie dough into 2 and shape them into two large cookies. Place them onto your prepared baking sheet, keeping them 2-3 inches apart (Add more M&Ms and sprinkles at the top of the cookies if desired).
- Bake at 350°F/176°C for 11 minutes or until the edges are set but the centers are still gooey.
- Cool for 10 mins on the baking sheet and Enjoy!
