Ingredients

  • 60g unsalted butter (room temperature)

  • 40g brown sugar

  • 40g sugar

  • 2 tbsp coffee

  • 90g all-purpose flour

  • ¼ tsp baking powder

  • ½ tsp baking soda

  • 30g cocoa powder

  • 25g Dark chocolate chips (+ more for the top of the cookies)

  • A pinch of sea salt flakes

Instructions

  • Preheat the oven to 350F/180C.
  • Cream together butter and sugars until combined.
  • Add the coffee in and mix.
  • Mix in the flour, baking powder, baking soda, cocoa powder and chocolate chips until combined.
  • Divide the dough into 4 balls and place on a parchment/wax paper lined baking sheet.
  • Add a little more chocolate at the top of the cookies.
  • Bake for about 12 minutes.
  • Let the cookies cool completely on the baking sheet (they need to set up before being transferred) and add them a pinch of sea salt flakes.
