60g unsalted butter (room temperature)
40g brown sugar
40g sugar
2 tbsp coffee
90g all-purpose flour
¼ tsp baking powder
½ tsp baking soda
30g cocoa powder
25g Dark chocolate chips (+ more for the top of the cookies)
A pinch of sea salt flakes
Instructions
- Preheat the oven to 350F/180C.
- Cream together butter and sugars until combined.
- Add the coffee in and mix.
- Mix in the flour, baking powder, baking soda, cocoa powder and chocolate chips until combined.
- Divide the dough into 4 balls and place on a parchment/wax paper lined baking sheet.
- Add a little more chocolate at the top of the cookies.
- Bake for about 12 minutes.
- Let the cookies cool completely on the baking sheet (they need to set up before being transferred) and add them a pinch of sea salt flakes.
