Fluffy pumpkin muffins to start the day.

Ingredients

  • Muffins
  • 1 ½ cup All Purpose Flour (187.5g)

  • ¾ cup brown sugar (150g)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp pumpkin pie spice

  • A pinch of salt

  • 1/2 cup pumpkin puree (113g)

  • 1 tsp vainilla

  • 1 cup water (236g)

  • 1/3 cup canola oil (71.7g)

  • 2 tsp vinegar

  • Crumble
  • 3 tbsp melted butter

  • 1/2 cup all purpose flour

  • 3 tbsp sugar

  • 2 tbsp brown sugar

  • Glaze
  • 2 tbsp Powdered sugar

  • ¼ tsp vanilla extract

  • 1 tsp milk (more or less)

Instructions

  • Preheat the oven to 350F/176C.
  • In a bowl whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice and salt.
  • Add the pumpkin puree, vanilla, water, oil and vinegar, mix until fully combined.
  • Spoon the mixture into the muffin cases.
  • In another bowl, mix the crumble ingredients, and sprinkle the crumble onto the muffins.
  • Bake for 18-22 min or until a toothpick inserted in the center comes out clean.
  • In a small bowl whisk together the glaze ingredients.
  • When the muffins have cooled, sprinkle the glaze over them.
  • Enjoy!
