Chocolate Cake Kiki’s Delivery Service

Ingredients:

  • Chocolate Figures
  • White, red, and green candy melts *I’ll leave my template at the end of the recipe*

  • Chocolate Cake
  • 1 cup | 120g all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • a pinch of salt

  • 1 large egg

  • 1/2 cup | 120mL buttermilk (you can mix a little less of 1/2 cup milk with a half tbsp of white vinegar)

  • 1/4 | 140mL cup vegetable oil

  • 1/2 tablespoon vanilla extract

  • 2/3 cup | 150g granulated sugar

  • 1/4 cup | 25g unsweetened cocoa powder

  • 1/3 cup | 80mL hot coffee

  • Coffee Buttercream
  • 6 tbsp | 85g butter

  • 1 cup | 125g powdered sugar

  • 1 tbsp hot water + 2 tsp instant coffee

  • ½ tsp vanilla extract

  • ¼ tsp salt

  • Chocolate ganache glaze
  • ½ cup | 100g dark chocolate, finely chopped

  • little less ½ cup | 100g heavy cream

Instructions:

  • Chocolate figures
  • Place the white, green, and red candy melts into a piping bag. Submerge the piping bag in hot water to melt the candy melts.
  • Print out the template (it has to be in reverse). Lay the template under a sheet of parchment paper. Use the melted candy melts to trace and create the designs according to the template. Ensure that the letters are reversed so they can be read correctly once placed on the cake.
  • Allow the chocolate designs to harden by placing them in the refrigerator. This will help them set properly before placing them on the cake.
  • Chocolate Cake
  • Preheat the oven to 350°F (175°C). Grease a 6-inch round cake pan with butter or baking spray and line the bottom with parchment paper.
  • In a small mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and a pinch of salt. Set aside.
  • In a large mixing bowl, whisk together the egg, buttermilk, vegetable oil, vanilla extract, and granulated sugar until well combined.
  • In a separate small bowl, mix the unsweetened cocoa powder with the hot coffee until smooth. Add this cocoa-coffee mixture to the wet ingredients and whisk until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, whisking until the batter is smooth and no lumps remain.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and allow it to cool in the pan for 15 minutes. Then, carefully invert the cake onto a wire rack, remove the parchment paper, and allow it to cool completely before frosting.
  • Coffee Buttercream
  • Whip the butter until fluffy, then gradually add powdered sugar at low speed until incorporated.
  • Add coffee mixture, vanilla extract, and salt. Beat well.
  • Cut the cooled cake into three layers and assemble with coffee buttercream. Chill in the fridge for 30 minutes.
  • Chocolate Ganache Glaze
  • Add the chopped dark chocolate into the boiled heavy cream.
  • Let it sit for a minute, then gently stir until smooth and glossy.
  • Allow the ganache to cool slightly until it reaches a thick but pourable consistency.
  • Pour the ganache over the chilled cake and decorate with chocolate figures.
