- Banana Muffins
3 bananas (mashed)
110g sweetener of choice (I used Blue Agave)
140g milk
100g coconut oil
1 tbsp apple cider vinegar
1 tsp vanilla extract
350g oat flour (I just blended rolled oats)
60g pecans (chopped)
3 tsp baking powder
½ tsp baking soda
3 tsp ground cinnamon
A pinch of salt
- Crumble topping
65g rolled oats
45g coconut oil (melted)
25g sweetener of choice (I used Blue Agave)
½ tsp ground cinnamon
Instructions
- Preheat the oven to 180C/350F.
- Add the mashed bananas, sweetener, milk, oil, apple cider and vanilla to a large bowl and mix until combined.
- Mix in the rest of the banana muffins ingredients until fully combined.
- Spoon the mixture into the muffin pan.
- In another bowl, mix the crumble topping ingredients, and sprinkle the crumble onto the muffin mixture.
- Bake for 20 min.
- Let the muffins cool and enjoy.
