Ingredients

  • Banana Muffins
  • 3 bananas (mashed)

  • 110g sweetener of choice (I used Blue Agave)

  • 140g milk

  • 100g coconut oil

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla extract

  • 350g oat flour (I just blended rolled oats)

  • 60g pecans (chopped)

  • 3 tsp baking powder

  • ½ tsp baking soda

  • 3 tsp ground cinnamon

  • A pinch of salt

  • Crumble topping
  • 65g rolled oats

  • 45g coconut oil (melted)

  • 25g sweetener of choice (I used Blue Agave)

  • ½ tsp ground cinnamon

Instructions

  • Preheat the oven to 180C/350F.
  • Add the mashed bananas, sweetener, milk, oil, apple cider and vanilla to a large bowl and mix until combined.
  • Mix in the rest of the banana muffins ingredients until fully combined.
  • Spoon the mixture into the muffin pan.
  • In another bowl, mix the crumble topping ingredients, and sprinkle the crumble onto the muffin mixture.
  • Bake for 20 min.
  • Let the muffins cool and enjoy.
