Valentines Sprinkle Cookies
Course: Dessert, SnacksCuisine: AmericanDifficulty: EasyThis cookie dough base also works to make the “lofthouse cookies” in my Valentine’s Day cookie box. If you want, you can divide the dough in half to have small portions of both cookies.
Ingredients:
- Cookie Dough:
1 cup + 1/2 tbsp (130g) all-purpose flour
1 tsp baking powder
A pinch of salt
5 tbsp (71g) unsalted butter (room temp)
1/2 cup (100g) sugar
1 egg (room temp)
1/2 tsp vanilla extract
- Decoration:
Nonpareil Valentine’s day sprinkles
Chocolate of your choice (Teddy Lindt, Hershey’s Kisses, or heart-shaped chocolate, etc.)
Instructions
- Cookie Dough:
- Whisk the flour, baking powder, and salt together in a medium bowl until combined. Set aside.
- In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until creamy and combined. Add the egg and vanilla extract and beat until combined.
- Add the flour mixture to the wet ingredients and mix on low speed until fully combined.
- Roll the dough into balls, about a tbsp of dough each (this recipe makes 12 cookies).
[If you’re making the box of Valentine’s Day cookies, you can save half of this cookie dough to also make 6 lofthouse cookies]. - Generously roll each dough ball in the sprinkles.
- Place the sprinkled dough balls on a baking sheet or plate, cover them, and chill them in the refrigerator for 20 minutes, and up to 1 day.
- While the cookie dough balls are chilling, preheat the oven to 350°F/177°C.
- Place the chilled dough balls about 2 inches apart on the lined baking sheets.
- Bake for 12 minutes or until edges appear set.
- Decoration:
- Remove cookies from the oven and allow them to cool on the baking sheets for 5 minutes.
- Press the chocolate of your choice into the center of each cookie, then, using a thin spatula, immediately transfer the cookies to a large plate.
