- Dough
210g all-purpose flour (+ a little more for dusting)
½ tsp ground cinnamon
A pinch of nutmeg
A pinch of salt
25g sugar
25g light brown sugar
4g instant yeast
60ml milk
42g unsalted butter
½ tbsp vanilla
60g sour cream
1 egg (room temperature)
- Filling
30g unsalted butter (room temperature)
1 tbsp brown sugar
1 ½ tbsp sugar
½ tbsp ground cinnamon
A pinch of nutmeg
- Glaze
57g cream cheese (room temperature)
14g butter (room temperature)
½ tbsp vanilla
A pinch salt
1 tbsp milk
90g powdered sugar
Instructions
- Dough
- In the bowl of a stand mixer add and whisk together flour, cinnamon, nutmeg, salt, sugars and yeast.
- In another bowl (safe for microwave) add milk, butter, vanilla and sour cream. Microwave until lukewarm and mix until butter is melted.
- Using the dough hook on the stand mixer, Pour the wet mixture and egg into the stand mixer bowl and start mixing on low (mix until the dough comes together).
- Transfer the dough to a large oiled bowl, cover with plastic wrap and let it rise in a warm place (about 1-2 hours).
- Filling
- On a floured work surface roll the dough out to a rectangle and spread the butter over the dough.
- Mix the sugars, cinnamon and nutmeg and sprinkle over the dough.
- Tightly roll the dough up and cut into 6 even pieces (You can cut it using dental floss by wrapping it around the roll and pulling or just using a sharp knife).
- Place the cinnamon rolls in a greased 8.5×6 inch baking pan, cover (with a kitchen towel or plastic wrap) and let them rest in a warm place for about 40 minutes for a final rise.
- Preheat the oven to 350F/180C and bake for 28 minutes.
- Glaze
- In a bowl add and mix the cream cheese, butter, vanilla, salt and milk until smooth.
- Add the powdered sugar and mix until fully incorporated.
- Glaze the cinnamon rolls and enjoy.
