Tiana’s Beignets

Let’s make the iconic beignets from The Princess and the Frog~
This makes 20-24 small beignets!

Ingredients:

  • 1/2 cup warm water

  • 1 teaspoon active yeast

  • 3 tablespoons + 2 teaspoons sugar

  • 1/3 cup whole milk

  • 1 small egg + 1 yolk

  • 1 ½ tablespoons melted unsalted butter

  • A pinch of sea salt

  • 2 cups + 2 ½ tablespoons All-Purpose Flour

  • Neutral oil for frying (such as canola oil)

  • Honey

  • Powdered sugar

Instructions:

  • In the bowl of a standing mixer, combine warm water, yeast, and 1 tablespoon of sugar. Whisk until combined and let sit for 7-10 minutes until a raft forms on top.
  • Add remaining sugar, milk, eggs, and melted butter to the bowl. Whisk until combined.
  • Attach the bowl to the stand mixer with the hook attachment. Add salt and flour. Mix on medium speed until smooth and the dough pulls away from the inside of the bowl, about 3-6 minutes. (If making by hand, knead the dough in a large bowl until smooth, you can do it!~)
  • Grease the bowl a little and cover the dough with plastic wrap and a kitchen towel. Let it sit in a warm place until it doubles in size, about an hour.
  • Transfer the dough to a floured surface. Roll out until ½” (1.2cm) thick. Cut into 1 ½” to 2” (8cm) squares or rectangles. Transfer uncooked beignets to a tray lined with parchment paper dusted with flour to prevent sticking.
  • Using a steel spatula, add 5-6 beignets to a pot of hot oil or a deep fryer set to 350°F/175°C (I didn’t have a thermometer, so I sacrificed one of the beignets to test when the oil was hot enough for frying). Cook each side for 1 1⁄2 to 2 minutes or until golden brown.
  • Cook in batches until all beignets are fried. Drain on a sheet tray with paper towels.
  • Coat beignets heavily in honey and powdered sugar, Enjoy!
