Thumbprint Cookies from When Marnie Was There

Ingredients:
⅓ cup | 75 g unsalted butter (softened)
½ cup + 2 tsp | 60 g powdered sugar + extra for sprinkling
1 teaspoon vanilla extract
1 small egg
Pinch of salt
⅔ cup | 175 g all-purpose flour
Strawberry Jam
Instructions:
- In a bowl, cream together the softened butter and powdered sugar (In the video I used 35 g of granulated sugar because I didn’t have any powdered sugar left, but I recommend using powdered sugar!).
- Add the egg and vanilla extract, beating well until fully incorporated.
- Gradually incorporate the salt and flour into the wet ingredients, mixing until a smooth dough forms.
- Shape the dough into 1 tablespoon-sized balls and roll them thoroughly. This recipe makes 15 cookies.
- Place the dough balls on a baking sheet lined with wax or parchment paper, then gently press an indent into the center of each cookie using your finger.
- Spoon strawberry jam into each thumbprint, filling them to the brim (you can use a piping bag for precision).
- Chill the cookies on the baking sheet in the refrigerator while preheating the oven to 180°C (356°F) for 15 minutes.
- Once the oven is preheated, remove the baking sheet from the fridge and bake the cookies for 10-12 minutes or until the edges are set.
- Allow the cookies to cool completely on the baking sheet.
