Teddy bear chocolate cupcakes, filled with chocolate ganache and decorated with vanilla and chocolate buttercream 🐻❤️🐻‍❄️

Ingredients

  • Cupcakes:
  • ½ cup all-purpose flour

  • ½ cup sugar

  • ¼ cup cocoa powder

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • Pinch of salt

  • 1 egg

  • 3 tbsp milk

  • 2 tbsp vegetable oil

  • ½ tsp vanilla extract

  • ¼ cup hot brewed coffee

  • Chocolate Ganache Filling:
  • 57g dark chocolate, chopped

  • ½ cup (120 ml) heavy cream

  • Buttercream Frosting:
  • ½ cup (115g) unsalted butter, softened

  • 1 ½ cups (180g) powdered sugar

  • 1 tbsp (15 ml) whipping cream

  • 1-2 tbsp cocoa powder

  • Pinch of salt

  • Decoration:
  • Toothpicks

  • Ribbon (for bows)

Instructions

  • Cupcakes:
  • Preheat the oven to 350°F (175°C). Line a cupcake pan with liners. (I used these teacup shaped silicone molds, I put them on a baking sheet to make it easier to put them in or take them out of the oven.).
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add egg, milk, vegetable oil, and vanilla extract. Mix until smooth.
  • Gradually pour in hot coffee while mixing on low speed until combined.
  • Divide batter evenly among cupcake liners, filling each about two-thirds full.
  • Bake for 13-15 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool completely.
  • Chocolate Ganache Filling:
  • Place chopped chocolate in a heatproof bowl.
  • In a small saucepan, heat cream until just simmering.
  • Pour hot cream over chocolate and let sit for 1-2 minutes. Stir until smooth and glossy.
  • Let the ganache cool to room temperature, stirring occasionally.
  • Buttercream Frosting:
  • In a large bowl, beat softened butter until creamy.
  • Gradually add powdered sugar, mixing until well combined and fluffy.
  • Add whipping cream and beat until smooth.
  • Divide frosting in half. Mix cocoa powder into one half until evenly combined.
  • Assembling:
  • Using a small knife or apple corer, cut a small hole in the center of each cupcake to create a pocket.
  • Fill a piping bag with chocolate ganache. Pipe ganache into the center of each cupcake.
  • Use a large portion scoop or piping bag to pipe buttercream frosting onto each cupcake, creating the teddy bear head.
  • Fill two piping bags with the chocolate and vanilla buttercream and pipe ears and a nose onto each cupcake. You can use an icing spatula to improve the shapes. *Tip: Refrigerate cupcakes for 10 minutes between decorating if buttercream is too soft to hold shape in warm weather*
  • To make the teddy bear faces use chocolate ganache or melted chocolate and a toothpick.
  • Decoration:
  • Cut ribbon into small pieces and tie into bows.
  • Attach a bow to the top of each toothpick by tying it securely around the toothpick or gluing it.
  • Insert toothpick bows into the top of each cupcake, positioning neatly.
