Steamed Meat Buns from Haikyuu

Ingredients
- Dough:
1/2 cup warm water
1/2 tsp active dry yeast
A pinch of salt
1 1/2 cups all-purpose flour
- Meat Filling:
225 g fresh ground beef
1-4 tbsp soy sauce
1/2 tbsp oyster sauce
1 tbsp water
1 tbsp brown sugar
1 tbsp butter, melted
1-2 green onions, chopped (optional)
¼ onion, chopped
1 small carrot, chopped
1 piece/rib celery, chopped
1-2 button mushrooms, chopped (optional)
1 tbsp fresh ginger, grated
1 tsp garlic, chopped
1-2 tsp Sriracha sauce (optional)
Instructions:
- In a big bowl, pour the warm water and stir in the active dry yeast. Let it sit for about 5 minutes until the yeast foams up.
- Incorporate the all-purpose flour and a pinch of salt. Using a dough hook attachment or kneading by hand, mix until the dough becomes soft and smooth, not sticking to the bowl or your hands.
- Cover the dough with plastic film and let it proof for about 1 hour in a warm spot until it doubles in size.
- While the dough proofs, mix together all the meat filling ingredients in a medium bowl. Cover and leave in the fridge until making the buns.
- Cut out six 3″x 3″ squares of parchment paper for the buns to sit on in the steamer.
- After proofing, divide the dough into 6 equal pieces and roll each into a disc. Add the meat filling in the center of each disc, gather the edges of the dough around the filling, and pinch the edges together to seal. (I tried to follow this video to wrap the buns but as you can see I’m not very good at it haha)
- Prepare your steamer (I use this Bamboo Steamer) with about 5 cups of warm water. Place the assembled buns, seam side up, on parchment squares in the steamer, ensuring they have at least 1 inch of space between them. Let them proof for 10 minutes.
- After proofing, turn on the heat to medium/high, wait for the water to start boiling, and steam the buns for 20 minutes with the lid tightly covered. *DO NOT* uncover the lid during this time.
- After steaming, turn off the heat and let the buns sit in the steamer with the lid covered for an additional 5 minutes to set. *Again, DO NOT* uncover the lid during this time.
- 10. Carefully uncover the steamer after the final 5-minute timer goes off, and enjoy the steamed meat buns. Be patient during the steaming and post-steaming process to ensure the buns retain their shape and texture. Serve with Sriracha sauce for extra flavor. Enjoy!
