Small Chocolate Cake

Ingredients
- Dark Chocolate Icing
100g dark chocolate
45g unsalted butter
65g icing sugar
125ml heavy cream
a pinch of salt
- Chocolate Cake
15g cocoa powder
25ml hot water mixed with 1 tsp instant coffee
65ml vegetable oil
40ml buttermilk
1 egg
65g flour
40g brown sugar
40g sugar
½ tsp baking soda mixed with 2 tsp white vinegar
Instructions
- Dark Chocolate Icing
- In a pot, add all the ingredients for the icing.
- Place it onto medium heat, constantly stirring, until everything has melted and you have a smooth mixture.
- Pour it into a bowl, wrap with plastic and leave it in the fridge (it takes about 3-5 hours to get a thick spreadable consistency).
- Chocolate Cake
- Preheat the oven to 180C/350F. Grease and line 6 inch cake pan (I used this one).
- Add the cocoa powder and hot water+coffee mixture and whisk this until smooth.
- Add oil, buttermilk and egg into it and whisk until combined.
- Add and whisk together the sugars and flour until you get a smooth batter.
- In a separate small bowl, mix the baking soda and vinegar, it will start bubbling, just give it a quick mix then pour it straight away into your cake batter. Whisk until incorporated.
- Pour this batter into your prepared cake pan.
- Bake at 180C/350F for about 15-25 minutes.
- Once baked, leave it to cool completely.
- Now you just have to add the chocolate icing to the cake, I also added some fresh strawberries to decorate but this is optional.
