Sanji’s Mini Strawberry Cake

Sanji’s mini strawberry shortcake from the episode 793 of One Piece~

Ingredients

  • Vanilla Sponge Cake
  • 2 small eggs or 1 large egg (room temperature)

  • 48 g | ¼ cup sugar

  • 30 ml | 2 tbsp milk

  • 1 tsp vanilla extract

  • A pinch of salt

  • 48g | ⅓ cup + 1 tbsp all purpose flour

  • ½ tsp baking powder

  • Decoration
  • ¼ – ½ cup heavy cream

  • 1 tbsp powdered sugar

  • a fresh strawberry

Instructions:

  • Vanilla Sponge Cake
  • Preheat the oven to 350°F (180°C). Grease and line a 4-inch cake pan.
  • In a medium bowl, using an electric mixer, whip the egg whites until they form stiff peaks, gradually add 13g (1 tbsp) of sugar while continuing to whip until firm. Set aside.
  • In a large bowl, whisk together the egg yolks and remaining 35g (3 tbsp) of sugar until pale. Add milk, vanilla extract, and salt, and mix until well combined.
  • Sift the flour and baking powder into the egg yolk mixture, gently folding until just combined.
  • Add about a third of the whipped egg whites into the egg yolk mixture and gently fold it in. Then, fold in the remaining whipped egg whites until fully combined.
  • Pour the batter into the prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before decorating.
  • Decoration
  • In a large mixing bowl, beat cold heavy cream and powdered sugar until soft/medium peaks form. Be careful not to overbeat.
  • Once the cake has cooled, level it if necessary and place it on a serving plate or cake stand.
  • Add a dollop of whipped cream on top of the cake and spread it evenly.
  • Place the fresh strawberry in the center of the whipped cream and enjoy!
