Delicious and chewy pumpkin spice chocolate chips.

Ingredients

  • ¼ cup (58g) unsalted butter (melted & slightly cooled)

  • ⅛ cup (25g) brown sugar

  • ¼ cup (50g) sugar

  • 3 tbsp (43g) pumpkin puree

  • ½ tsp vanilla extract

  • ¾ cups (94g) all-purpose flour

  • Pinch of salt

  • 1 tsp ground cinnamon

  • ½ tsp pumpkin pie spice

  • ⅛ tsp baking soda

  • ⅛ tsp baking powder

  • 1/3 cup semi-sweet chocolate chips (or more)

Instructions

  • In a bowl whisk the melted butter and sugars until fully combined.
  • Add the pumpkin puree and vanilla and whisk until smooth.
  • In another bowl, whisk the flour, salt, cinnamon, pumpkin pie spice, baking soda, and baking powder.
  • Pour the butter/pumpkin mixture into the dry ingredients and mix with a rubber spatula or large spoon.
  • Add the chocolate chips and mix well.
  • Wrap the dough in plastic and refrigerate for half an hour (you can also freeze it and have cookie dough ready to bake for another day, I have left it for more than a week).
  • Remove dough from the refrigerator.
  • Roll 1 tablespoon of dough into balls and place them evenly spaced (2 inches apart) on a baking pan with wax/parchment paper.
  • Bake in a preheated oven at 350F/177C for 8-12 minutes.
  • Let the cookies cool completely on the baking sheet (they need to set up before being transferred) and enjoy.
