Ingredients
¼ cup (58g) unsalted butter (melted & slightly cooled)
⅛ cup (25g) brown sugar
¼ cup (50g) sugar
3 tbsp (43g) pumpkin puree
½ tsp vanilla extract
¾ cups (94g) all-purpose flour
Pinch of salt
1 tsp ground cinnamon
½ tsp pumpkin pie spice
⅛ tsp baking soda
⅛ tsp baking powder
1/3 cup semi-sweet chocolate chips (or more)
Instructions
- In a bowl whisk the melted butter and sugars until fully combined.
- Add the pumpkin puree and vanilla and whisk until smooth.
- In another bowl, whisk the flour, salt, cinnamon, pumpkin pie spice, baking soda, and baking powder.
- Pour the butter/pumpkin mixture into the dry ingredients and mix with a rubber spatula or large spoon.
- Add the chocolate chips and mix well.
- Wrap the dough in plastic and refrigerate for half an hour (you can also freeze it and have cookie dough ready to bake for another day, I have left it for more than a week).
- Remove dough from the refrigerator.
- Roll 1 tablespoon of dough into balls and place them evenly spaced (2 inches apart) on a baking pan with wax/parchment paper.
- Bake in a preheated oven at 350F/177C for 8-12 minutes.
- Let the cookies cool completely on the baking sheet (they need to set up before being transferred) and enjoy.
