Pink Meringue Roll Cake.

Ingredients

  • Meringue Roll
  • 4 egg whites

  • 1 cup sugar

  • 1 tsp cornstarch

  • 1 tsp vinegar

  • 1 tsp vanilla

  • Food coloring (pink or red)

  • Powdered sugar (for coating baking paper)

  • Filling and Decoration
  • 1 ¼ cups heavy cream

  • 2 tbsp powdered sugar

  • Fresh strawberries

Instructions

  • Meringue Roll
  • Preheat your oven to 160°C / 320°F.
  • Oil a baking tray, line it with parchment paper, and smooth it out.
  • Use an electric mixer to whip egg whites until soft peaks form.
  • Gradually add sugar, beating on high for 8-10 minutes until glossy.
  • Add a little pink or red food coloring and mix.
  • Gently fold in the cornstarch, vinegar, and vanilla essence on low until combined.
  • Spread the meringue on the tray, leaving a 1-inch gap. Bake for 15 minutes or until lightly browned.
  • Dust another piece of parchment paper with powdered sugar. Flip the meringue cake onto the sugared parchment paper and let it cool completely.
  • Filling and Decoration
  • Whip heavy cream and powdered sugar until thick and fluffy. Set aside ½ cup for decoration.
  • Spread the whip cream on the cake and add sliced strawberries.
  • Roll the cake into a roulade using the parchment paper. Wrap in a tea towel and refrigerate for 2-3 hours.
  • Unwrap and place on a serving plate. Top with reserved whipped cream and add strawberries.
  • Enjoy!
