Easy and delicious pecan cookies, perfect for fall.

INGREDIENTS

  • 135 g unsalted butter (softened or melted*)

  • 90 g powdered sugar + more to cover the cookies

  • Pinch of salt

  • Pinch ground cinnamon

  • 2 tsp vanilla extract

  • 80 g pecan halves

  • 215 g all purpose flour

Instructions

  • Preheat the oven to 176C/350F.
  • In a bowl, whisk together the butter, sugar, salt, cinnamon and vanilla. (you can use a stand mixer or hand mixer).
  • Sift in the flour and mix until fully incorporated.
  • Crush the pecan halves in a food processor or blender and add them to the cookie mixture.
  • Form to 9-12 balls with the cookie dough, placing them on a baking sheet with parchment/ wax paper.
  • Bake for 14 min or until the bottoms are golden.
  • Remove the baking sheet from the oven and let the cookies cool a little bit.
  • Roll the cookies in powdered sugar while hot and enjoy!

NotEs

  • It’s easier to handle the dough with melted butter, it breaks less.
