INGREDIENTS
135 g unsalted butter (softened or melted*)
90 g powdered sugar + more to cover the cookies
Pinch of salt
Pinch ground cinnamon
2 tsp vanilla extract
80 g pecan halves
215 g all purpose flour
Instructions
- Preheat the oven to 176C/350F.
- In a bowl, whisk together the butter, sugar, salt, cinnamon and vanilla. (you can use a stand mixer or hand mixer).
- Sift in the flour and mix until fully incorporated.
- Crush the pecan halves in a food processor or blender and add them to the cookie mixture.
- Form to 9-12 balls with the cookie dough, placing them on a baking sheet with parchment/ wax paper.
- Bake for 14 min or until the bottoms are golden.
- Remove the baking sheet from the oven and let the cookies cool a little bit.
- Roll the cookies in powdered sugar while hot and enjoy!
NotEs
- It’s easier to handle the dough with melted butter, it breaks less.
