OHSHC inspired Strawberry Shortcake

Small strawberry cake inspired by the number one fan of pastries: Honey Senpai from Ouran High School Host Club.

Ingredients

  • Bunny Marshmallow Fondant:
  • 1 cup miniature marshmallows

  • 1 teaspoon water

  • ¼ – ½ cup powdered sugar

  • Pink or red food coloring

  • Brown or black edible marker

  • Toothpicks

  • Vanilla Cake:
  • ½ cup + 2 tbsp (163g) all-purpose flour

  • 1 tsp baking powder

  • Pinch of salt

  • 3 tbsp (42g) unsalted butter, room temperature

  • ⅓ cup + 1 tbsp (75g) sugar

  • 1 tbsp (15ml) vegetable oil

  • 1 tsp vanilla extract

  • 2 medium eggs

  • ¼ cup + 1 tbsp (75ml) milk

  • Assembly:
  • 2 cups heavy whipping cream (very cold)

  • 6 – 8 tablespoons powdered sugar

  • Fresh strawberries (washed)

Instructions:

  • Bunny Marshmallow Fondant:
  • Place the marshmallows and water in a medium microwaveable bowl. Microwave on high for 30 seconds. Stir gently with a spoon and microwave for another 20 seconds. Stir until the marshmallows are completely melted.
  • Add a little bit of pink or red food coloring to achieve a light pink color for the bunny.
  • Gradually add powdered sugar and stir until it forms a ball. Adjust the amount of powdered sugar as needed until it’s no longer sticky.
  • Mold the head and ears of the bunny on a clean surface. Insert toothpicks into the ears to secure them to the head. Optionally, reinforce with additional toothpicks if needed. Use an edible marker to paint the bunny’s face. Store in a food container until ready to use. *With this amount of fondant, I ended up making two adorable bunnies!*
  • Vanilla Cake:
  • Preheat the oven to 350°F (176°C). Grease and line a 6-inch cake pan with parchment paper.
  • In a small bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together butter, sugar, oil, and vanilla extract until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  • Gradually add dry ingredients to the batter, alternating with milk, and mix until smooth. Do not overmix.
  • Pour the batter into the prepared cake pan and bake for 18-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Assembly:
  • Slice the cooled cake into two even layers. Cut some strawberries into thick slices for the filling and reserve 8 small/medium sized strawberries for decoration.
  • In a large mixing bowl, beat cold heavy cream and powdered sugar until medium peaks form. Be careful not to overbeat.
  • Place one cake layer on a serving plate or cake stand. Spread a layer of whipped cream over the cake, then arrange sliced strawberries on top. Top with the second cake layer.
  • Frost the top and sides of the cake with whipped cream. Use a piping bag fitted with a closed star tip to create eight swirls of whipped cream around the top edge of the cake.
  • Place a whole strawberry on top of each swirl. Create a central swirl of whipped cream and place the fondant bunny on top. Optionally, secure the bunny with a halved skewer to prevent it from moving or sinking into the cake.
