These Grinch-inspired Crumbl cookies are perfect for Christmas—soft, buttery cookies topped with creamy green and white frosting, and decorated with adorable heart and Christmas sprinkles.

Ingredients

  • Cookie Dough:
  • 115g unsalted butter, softened

  • 100g granulated sugar

  • 80g powdered sugar

  • Pinch of salt

  • 2 large eggs

  • 1 tsp vanilla extract

  • 270g all-purpose flour

  • Frosting:
  • 125g unsalted butter, softened

  • 250g powdered sugar

  • Green food coloring (or 1-2 tsp matcha powder for a more natural flavor)

  • Decoration:
  • Red heart sprinkles (see note to make your own hearts from fondant)

  • Christmas sprinkles or crushed candy cane

Instructions

  • Cookie Dough:
  • In a mixing bowl, beat together the softened butter, granulated sugar, and powdered sugar until the mixture is light, fluffy, and pale (about 3-4 minutes with a hand mixer or stand mixer).
  • Add the pinch of salt, eggs, and vanilla extract to the creamed butter and sugar mixture. Mix until fully combined.
  • Gradually add the all-purpose flour, mixing until just incorporated. Be careful not to overmix, as this can make the cookies tough.
  • Divide the dough into equal portions, each about 75g in weight. Roll them into balls and place them on a tray. Refrigerate for at least 40 minutes to chill.
  • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  • After chilling, place the dough balls onto the prepared baking sheet, leaving space between each. Gently flatten each ball with the palm of your hand or the back of a spoon.
  • Bake in the preheated oven for 12-14 minutes, or until the edges are slightly golden but the centers remain soft. Remove from the oven and let the cookies cool completely.
  • Frosting:
  • In a mixing bowl, beat the softened butter and powdered sugar together until smooth, pale, and fluffy (about 3-4 minutes).
  • Divide the frosting into two portions. Add a few drops of green food coloring (or mix in 1-2 teaspoons of matcha powder) to one half to achieve a Grinch-inspired green color. Leave the other half white.
  • Decoration:
  • Once the cookies have cooled, use a spatula or piping bag to frost the cookies. Use the green frosting for some and the white frosting for others. For the white-frosted cookies, sprinkle on Christmas sprinkles or crushed candy canes.
  • For the green-frosted cookies, place small red heart sprinkles in the center of each cookie to create the iconic Grinch “heart”.

Notes

  • To make homemade fondant red hearts, microwave ½ cup of miniature marshmallows and ½ tsp of water for 30-40 seconds until melted. Stir in a few drops of red food coloring, then gradually mix in ¼ cup of powdered sugar until the mixture forms a dough-like ball. If it’s sticky, lightly grease your hands with shortening or cornstarch. Roll out the fondant and use a small heart-shaped cookie cutter to cut out hearts.
