Cat and teddy bear shaped brownie donuts.

Ingredients

  • For the Brownie Donuts:
  • 66 g dark chocolate

  • 66 g unsalted butter

  • 1 large egg

  • 90 g light brown soft sugar

  • 30 g all-purpose flour

  • 16 g cocoa powder

  • 60 g chocolate chips

  • For the Decoration:
  • Pink and white candy melts (or colors of choice)

  • Dark chocolate

  • Sprinkles

Instructions

  • For the Brownie Donuts:
  • Preheat the oven to 180°C (350°F) and grease your doughnut mold (this recipe makes 8 donuts; I used a cute cat/bear-shaped mold).
  • In a heatproof bowl, melt the dark chocolate and unsalted butter together. Microwave in 10-second intervals, stirring after each, until fully melted. Let this cool for about 10 minutes.
  • In a separate large bowl, whisk together the egg and light brown sugar for a few minutes until the mixture doubles in volume, becomes lighter in color, and has a meringue-like texture.
  • Once whipped, gently fold in the cooled chocolate-butter mixture.
  • Sift in the flour and cocoa powder, and fold until combined.
  • Stir in the chocolate chips, folding them through evenly.
  • Transfer the brownie batter into a large piping bag, and pipe the mixture into the prepared donut molds.
  • Bake in the preheated oven for 13-15 minutes. Let the donuts cool completely in the molds.
  • For the Decoration:
  • Melt the pink and white candy melts until smooth. Dip each donut into the melted candy, allowing the excess to drip off before placing the donut on a parchment-lined tray to set.
  • For the cat/bear faces, melt the dark chocolate and place it in a piping bag (or use a toothpick for more control). Carefully pipe the faces onto the cooled donuts.
  • Once hardened, drizzle more chocolate or add sprinkles to the donuts.
