Cherry Pie with Chocolate Ganache

Let’s make the Cherry Pie from Cooking Mama.

Ingredients:

  • Pie Crust
  • 350g | 2 ¾ cups flour

  • 15g | 1 tbsp cornstarch

  • a pinch of salt

  • 250g | 1 cup + 2 tbsp unsalted butter

  • 15g | 1 tbsp apple cider vinegar

  • 120g water (iced)

  • Cherry Filling
  • 2 cups whole pitted fresh cherries + more for garnish

  • 1-2 tbsp sugar

  • 1 tbsp brandy (optional)

  • 1 tbsp freshly squeezed lemon juice

  • 2 tbsp cornstarch

  • White Chocolate Ganache
  • ¾ cup white chocolate chips

  • 3 tbsp heavy cream

Instructions:

  • Pie Crust
  • In a bowl, combine all the dry ingredients.
  • Add the cold butter to the bowl and use your hands or a food processor to mix it until the butter reaches the size of a pea.
  • Combine the apple cider vinegar and ice water, then pour the mixture over the dry ingredients. Mix everything together.
  • Knead the dough until it’s ready, then wrap it in plastic wrap. Refrigerate it overnight or for at least 3 hours.
  • Take the dough out from the fridge and let it come to room temperature for 5 minutes. Preheat the oven to 220°C (428°F).
  • On a floured surface, roll out the dough to a 30 cm diameter circle.
  • Transfer the rolled dough to the pie pan and mark with a fork. Line the bottom of the crust with a piece of parchment paper and spread ceramic pie weights on top. Bake the crust at 220°C (428°F) for 20-25 minutes.
  • Cool for a few minutes, then transfer to a cooling rack to cool completely.
  • Cherry Filling
  • Place cherries into a large saucepan. Add sugar, brandy (optional), lemon juice, and cornstarch, then stir to coat.
  • Turn on the heat to medium.
  • Cook the filling, stirring often, until glossy and thickened, about 5-10 minutes. If you desire additional sweetness, add more sugar.
  • Remove the pan from the heat and let the filling cool completely. Set aside.
  • White Chocolate Ganache
  • In a medium bowl, heat the cream in the microwave until it boils.
  • Add the white chocolate chips and whisk until melted and smooth.
  • Pour the white chocolate ganache over the crust and spread evenly. Let it cool.
  • Assembly
  • Add the cherry filling on top of the chocolate ganache and garnish with fresh cherries.
  • Enjoy!
