Cutest almond cookies.

INGREDIENTS

  • 150 g unsalted butter (softened)

  • 120 g of powdered sugar

  • Pinch of salt

  • 1 1/2 teaspoon vanilla extractt

  • 1 egg

  • 50 g almond flour

  • 300 g all purpose flour

  • ½ tbsp cocoa powder

  • 1 tbsp instant coffee (mix with a teaspoon of water)

INSTRUCTIONS

  • Preheat the oven to 170C/338F.
  • Cream together the butter, sugar and salt in a bowl.
  • Add and stir the vanilla, egg and flours until fully incorporated.
  • Separate 2/4 of the dough so that it is colorless, leave aside.
  • To make the light brown color dough, mix the cocoa powder with the rest of the dough, separate half of it and leave aside.
  • And to make the dark brown color dough, mix the instant coffee with the rest of the dough.
  • Wrap the “colorless”, light brown and dark brown dough separately in plastic and let them rest in the fridge for an hour.
  • On a lightly floured work surface, place bits of the doughs to make a pattern like in the video, place parchment paper on top of the dough and roll it, use your favorite cat cookie cutters.
  • Place the cookies on a baking sheet with parchment/wax paper and bake for 18 min or until the bottoms are golden.
  • Remove the baking sheet from the oven and let the cookies cool completely, enjoy!
