INGREDIENTS
150 g unsalted butter (softened)
120 g of powdered sugar
Pinch of salt
1 1/2 teaspoon vanilla extractt
1 egg
50 g almond flour
300 g all purpose flour
½ tbsp cocoa powder
1 tbsp instant coffee (mix with a teaspoon of water)
INSTRUCTIONS
- Preheat the oven to 170C/338F.
- Cream together the butter, sugar and salt in a bowl.
- Add and stir the vanilla, egg and flours until fully incorporated.
- Separate 2/4 of the dough so that it is colorless, leave aside.
- To make the light brown color dough, mix the cocoa powder with the rest of the dough, separate half of it and leave aside.
- And to make the dark brown color dough, mix the instant coffee with the rest of the dough.
- Wrap the “colorless”, light brown and dark brown dough separately in plastic and let them rest in the fridge for an hour.
- On a lightly floured work surface, place bits of the doughs to make a pattern like in the video, place parchment paper on top of the dough and roll it, use your favorite cat cookie cutters.
- Place the cookies on a baking sheet with parchment/wax paper and bake for 18 min or until the bottoms are golden.
- Remove the baking sheet from the oven and let the cookies cool completely, enjoy!
