Delicious blueberry and cream cheese buns.

INGREDIENTS

  • Dough
  • 185 g flour⁣

  • 95 g milk

  • 25 g sugar⁣

  • 6 g yeast⁣

  • ½ tsp salt⁣

  • 1 egg

  • 32 g butter⁣ (room temp⁣ and cubed)

  • Cream cheese filling
  • 100 g cream cheese (room temp⁣)

  • 15 g honey

  • 1 tsp vanilla extract

  • Toppings
  • An egg for the egg wash

  • 90 g of blueberry jam ⁣

  • Fresh blueberries (optional)

  • Rosemary (optional)

INSTRUCTIONS

  • Add all the “dough” ingredients, except the butter, into a big bowl and knead until the dough comes together (I used a stand mixer at low speed for 10 min with the hook attachment).
  • Add cubed butter and knead until the dough comes together. (I left it in the stand mixer at medium speed for 10 min).
  • Place the dough in a lightly oiled bowl, cover it with plastic wrap and let it proof in a warm place for 90 minutes approx.
  • Divide into 4 pieces and roll into balls, flatten each dough ball and use your fingers to create a center for the fillings in each bun.
  • Place the buns on a baking sheet and let them rise for 40 minutes.
  • Meanwhile for the Cream cheese filling: Combine the cream cheese, honey and vanilla in a small bowl.
  • When the buns finish proofing use your fingers to create a larger center and fill it with the cream cheese filling and jam, brush the ends of the bun with egg wash.
  • Bake at 180C for 14 minutes or until golden.
  • Add rosemary and fresh blueberries to decorate (optional).
