Bear oatmeal cookies

minutesSoft and chewy bear oatmeal cookies.
INGREDIENTS
53g all-purpose flour
1/4 tsp baking soda
a pinch of salt
1/4 tsp baking powder
1/2 tsp ground cinnamon
55g unsalted butter
50g brown sugar
25g sugar
1 egg
1/2 tsp vanilla extract
65g rolled old fashioned oats
5g or less of chocolate (decoration)
Instructions
- Whisk together flour, baking soda, salt, baking powder and cinnamon, set aside.
- In the bowl of a stand mixer fitted with the paddle attachment cream together the butter, brown sugar and sugar until fully incorporated. Add the egg and vanilla and mic together.
- Add the flour mixture and mix until combined and then mix in the oats.
- Scoop the dough out and shape into balls (you’ll need 8 big ones for the faces and 16 smaller ones for the ears of the bears).
- Place the cookies on a baking sheet with parchment/wax paper making the form of the bears using the cookie dough (spacing them 2-inches apart) let the cookie dough in the fridge for 20-30 min so that the cookie dough is cold and the shapes of the bears are kept when baking.
- Bake in a preheated oven at 170C/338F for 12 to 15 mins.
- Remove the baking sheet from the oven and let the cookies cool completely on the baking sheet (they need to set up before being transferred).
- Melt the chocolate in a piping bag (I just dip the piping bag with the chocolate in hot water and it melts easily) and make the bear’s faces.
*You can use a ziploc bag as a piping bag by cutting off one end of the bag.
