Ingredients

  • Muffins:
  • 1/2 cup unsalted butter, room temperature (113g)

  • 1/2 cup packed light brown sugar

  • 1/3 cup granulated sugar (67g)

  • 2 large eggs, room temperature

  • 2 tsp vanilla extract

  • 1/2 cup milk, room temperature (120ml)

  • 2 cups all-purpose flour (250g)

  • 2 tsp baking powder

  • 2 tsp ground cinnamon

  • 1/2 tsp salt

  • 2 small apples, peeled and chopped

  • Apple Pie Filling:
  • 2-3 small apples, peeled and chopped

  • 2 Tbsp unsalted butter (28g)

  • 1/4 cup packed light brown sugar (53g)

  • 1 1/2 tsp cornstarch

  • 2 tsp ground cinnamon

  • Cinnamon Whipped Cream:
  • 1 cup heavy whipping cream

  • 2 Tbsp powdered sugar

  • 1-2 tsp ground cinnamon

  • 1 tsp vanilla extract

Instructions

  • Muffins:
  • Preheat the oven to 425°F (220°C) and line a muffin tin with cupcake liners.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
  • Add the eggs and vanilla, mixing until combined.
  • Alternately add the dry ingredients (flour, baking powder, cinnamon, and salt) with the milk. Mix until just combined.
  • Gently fold in the chopped apples.
  • Scoop the batter evenly into the cupcake liners (makes 8 regular-sized muffins).
  • Bake for 5 minutes at 425°F, then reduce the temperature to 350°F (175°C) without opening the oven. Bake for an additional 15-18 minutes or until a toothpick inserted in the center comes out clean. Allow to cool.
  • Apple Pie Filling:
  • In a medium saucepan over medium-low heat, combine the chopped apples, butter, brown sugar, cornstarch, and cinnamon.
  • Stir frequently until the butter melts and the sugar dissolves. Bring to a simmer, stirring occasionally, until the apples are tender when pierced with a fork. Set aside to cool.
  • Prepare the Cinnamon Whipped Cream:
  • In a mixing bowl, combine the heavy cream, powdered sugar, cinnamon, and vanilla extract.
  • Whip with an electric mixer until soft peaks form, then continue until stiff peaks form. Taste and adjust sweetness or cinnamon as desired.
  • Assemble the Muffins:
  • Carefully scoop out the center of each muffin and fill the hole with the apple compote.
  • Top each muffin with another spoonful of apple pie filling, flattening it slightly, while leaving the edges of the muffin empty.
  • Using a small ribbon piping tip, pipe two crisscrossing lines of whipped cream over the apple topping. Switch to an open star piping tip to pipe a decorative border around the entire muffin.
