Bear shaped almond cookies with pecan bellies.

INGREDIENTS

  • Almond cookies
  • 150 g unsalted butter (softened)

  • 120 g glass of powdered sugar

  • Pinch of salt

  • 1.5 teaspoon vanilla

  • 1 egg

  • 50 g almond flour

  • 300 g all purpose flour

  • Decorations
  • 12 Pecans or almonds for the bear’s belly

  • 10 g chocolate

INSTRUCTIONS

  • Mix the butter, sugar and salt in a bowl.
  • Add and stir the vanilla, egg and flours.
  • Wrap the dough in plastic and let it rest in the fridge for an hour.
  • Put flour on a clean surface and roll out the cookie dough, use a bear cookie cutter and put the pecan nut or almond in the “belly/center” of the bear.
  • Place the cookies on a tray with wax paper and bake for 18 min at 170C or until the bottoms of the cookies are golden.
  • Remove the tray from the oven and let the cookies cool completely.
  • Melt chocolate in a pastry bag and make the bear’s faces.
