Heart-Shaped Apple Hand Pies

Ingredients:
- Pie Crust
350g | 2 ¾ cups all-purpose flour
15g | 1 tbsp cornstarch
Pinch of salt
250g | 1 cup + 2 tbsp unsalted butter, cold and cubed
15g | 1 tbsp apple cider vinegar
120g | ½ cup water, cold (ice water)
- Apple Filling
3-5 apples, cored and cubed
Juice of 1 lemon
150g | 2/3 cup granulated sugar
57g | 1/4 cup unsalted butter
1/2 tsp ground cinnamon
1 tbsp cornstarch
- Assembly
1 egg + 1 tsp milk, for egg wash
Instructions:
- Pie Crust
- In a large bowl, combine flour, cornstarch, and salt.
- Add cold cubed butter to the flour mixture. Using a pastry cutter or your hands, cut the butter into the flour until it resembles coarse crumbs with pea-sized pieces.
- In a small bowl, mix apple cider vinegar with cold water.
- Gradually add the vinegar-water mixture to the flour-butter mixture, stirring until the dough just starts to come together.
- Turn the dough out onto a lightly floured surface and knead gently until it forms a cohesive ball. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 3 hours or overnight.
- Apple Filling
- In a large skillet, melt butter over medium heat. Stir in cornstarch until well combined.
- Add the cubed apples, lemon juice, sugar and cook, stirring frequently, until the sugar dissolves and the mixture begins to simmer.
- Reduce heat to medium-low and continue cooking until apples are tender, stirring occasionally. Stir in ground cinnamon. Remove from heat and let cool before using.
- Assembly
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out chilled pie dough. Use a heart-shaped cookie cutter to cut out an even number of hearts.
- Place half of the hearts on the prepared baking sheet.
- Spoon about a heaping teaspoon (or more) of apple filling onto the center of each heart on the baking sheet.
- Place another heart-shaped dough on top of each filled heart, sealing the edges with a fork.
- In a small bowl, whisk together egg and milk to make an egg wash. Brush the tops of the pies lightly with egg wash.
- Bake in a preheated oven for 15-20 minutes or until the pies are golden brown and crisp.
- Remove from the oven and let cool on the baking sheet for a few minutes, enjoy~
