Pink Meringue Roll Cake

Ingredients
- Meringue Roll
4 egg whites
1 cup sugar
1 tsp cornstarch
1 tsp vinegar
1 tsp vanilla
Food coloring (pink or red)
Powdered sugar (for coating baking paper)

1 ¼ cups heavy cream
2 tbsp powdered sugar
Fresh strawberries
Instructions
- Meringue Roll
- Preheat your oven to 160°C / 320°F.
- Oil a baking tray, line it with parchment paper, and smooth it out.
- Use an electric mixer to whip egg whites until soft peaks form.
- Gradually add sugar, beating on high for 8-10 minutes until glossy.
- Add a little pink or red food coloring and mix.
- Gently fold in the cornstarch, vinegar, and vanilla essence on low until combined.
- Spread the meringue on the tray, leaving a 1-inch gap. Bake for 15 minutes or until lightly browned.
- Dust another piece of parchment paper with powdered sugar. Flip the meringue cake onto the sugared parchment paper and let it cool completely.
- Filling and Decoration
- Whip heavy cream and powdered sugar until thick and fluffy. Set aside ½ cup for decoration.
- Spread the whip cream on the cake and add sliced strawberries.
- Roll the cake into a roulade using the parchment paper. Wrap in a tea towel and refrigerate for 2-3 hours.
- Unwrap and place on a serving plate. Top with reserved whipped cream and add strawberries.
