Ingredients
- Muffins
1 ½ cup All Purpose Flour (187.5g)
¾ cup brown sugar (150g)
1 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
A pinch of salt
1/2 cup pumpkin puree (113g)
1 tsp vainilla
1 cup water (236g)
1/3 cup canola oil (71.7g)
2 tsp vinegar
- Crumble
3 tbsp melted butter
1/2 cup all purpose flour
3 tbsp sugar
2 tbsp brown sugar
- Glaze
2 tbsp Powdered sugar
¼ tsp vanilla extract
1 tsp milk (more or less)
Instructions
- Preheat the oven to 350F/176C.
- In a bowl whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice and salt.
- Add the pumpkin puree, vanilla, water, oil and vinegar, mix until fully combined.
- Spoon the mixture into the muffin cases.
- In another bowl, mix the crumble ingredients, and sprinkle the crumble onto the muffins.
- Bake for 18-22 min or until a toothpick inserted in the center comes out clean.
- In a small bowl whisk together the glaze ingredients.
- When the muffins have cooled, sprinkle the glaze over them.
